When I was visiting Wilmington a few weekends ago, my friends and I threw together this recipe for a quick, healthy, delicious dinner! It combines quinoa, fresh red peppers, hefty sweet potatoes, hearty chicken, sweet peas, and juicy onions. I made it last week for my family to try (they aren't the healthiest of eaters, sometimes...) and even THEY loved it! I mean... look at this beauty:
